About the Property

Rydges Melbourne is a 4.5-star hotel set in the heart of the East End Theatre District at 186 Exhibition Street, just steps from Her Majesty's Theatre, Chinatown and Collins Street. The hotel features 370 rooms, suites and apartments, a heated rooftop pool and fitness studio on level 23, and up to eleven flexible conference and event spaces spread across two levels, including the striking Centre Stage venue. At the heart of the food and beverage offering is Bossley Bar & Restaurant, a modern take on the classic Aussie pub showcasing locally sourced Victorian produce, alongside 24/7 in-room dining. As Food and Beverage Team Leader, you'll oversee the daily operations of this busy, multi-outlet department, leading a team of food service professionals to deliver exceptional guest experiences across restaurant, bar and events service.

Key Responsibilities

  • Provide strong leadership to the food and beverage team, including supervision, guidance and support to achieve departmental goals.
  • Train and manage a team of food service professionals that meets and exceeds departmental goals and guest satisfaction.
  • Oversee daily operations of the department, including scheduling, inventory management and cost control.
  • Ensure exceptional customer service standards are maintained, addressing enquiries, feedback and complaints promptly and professionally.
  • Collaborate with chefs, management and colleagues to develop and update menus in line with customer preferences and budgets.
  • Ensure compliance with all health, safety and sanitation regulations, conducting regular inspections and corrective actions.
  • Monitor the department's financial performance, implementing strategies to maximise profitability.
  • Coordinate and oversee special events, banquets and catering service, ensuring seamless execution and guest satisfaction.

What You'll Bring

  • Previous experience in a food and beverage supervisory or team leader role, ideally within a hotel or high-volume venue.
  • Strong leadership skills, with the ability to train, coach and manage a team.
  • A genuine passion for guest service, with the composure to handle enquiries and complaints professionally.
  • A solid understanding of food and beverage quality, presentation and portion control standards.
  • Sound financial acumen, with experience monitoring costs, revenue and profitability.
  • Excellent communication skills and a collaborative, team-first approach.
